A soap dispenser is one of the few objects on a bathroom counter you touch every single day, so the two things that matter most are how it feels to use and whether it still looks good in a year.

Choosing a pump: foam pumps aerate the soap into a light lather, use noticeably less soap per wash, and rinse away faster — the right choice for hand washing. Liquid pumps dispense soap at full strength, which is what you want for dish soap and thicker formulas. Every dispenser here takes either type, and the pump unscrews, so the decision isn't permanent. Choosing a material: ceramic is weighted enough that it won't slide or tip during one-handed pumping, and a fired glaze doesn't yellow or cloud the way plastic does. Glass trades a little of that heft for the ability to see the soap level at a glance.
